Argh! I'm trying to create a train line but the track keeps merging! any ideas?

OK, now for some on topic comments...

Tracks merge because it is cheaper to build. (For roads and channels it makes a lot more sense.) You can override this decision by holding CTRL button while building that track, then it will be built without considering other tracks around.

If your problem concerns diagonals, then:
a) two ways on tile (á la ttd) = impossible
b) it's generally hard to build diagonals anyway
c) safest (but tedious) is building short two-tile pieces like stairs, one by one, and then connecting them one by one... see attached picture

you can have a preview of what simutrans will build: click at start position but hold down mouse key, then try to move the mouse. if you release the mouse button then the track is built finally

Yes, since the mouse-drag build was introduced, diagonals are a piece of cake - not hardly as difficult as they used to be.

well I know how to preview the track before building; its just like TT, but seems like VS has the only solution to this.

Yes, holding the CTRL key is a requirement to keep things separate. And that's true for straights and diagonals alike - at least as soon as they go on for more than a number of tiles. But more than that is not required - not even for diagonals. The painstaking tile-by-tile building style is actually something from the past.

One small addition to Vs's solution. When you drag a diagonal make sure that at the end of the line the actual little bit of track under the cursor is pointing in the same direction as the start bit. IE. if the start bit is pointing to the left make sure the end bit is too. OR, space the second diagonal two tiles away from the first. (easiest) but looks ugly.
